Presented by Raw Chef Deborah, this is a livestreamed class (previously presented as a live hands-on one day class).
This livestream class is packed full of tips, techniques and recipes - it's like being in the Deliciously Raw studio in person. Here are a few of the techniques that you’ll learn. What could be more fun?! (other than eating it all of course...)
Planning, Plating and Presentation - learn principles of advance planning and preparation for a three course menu - and tricks for plating that will ensure that your efforts will be showcased for best results.
Flavour development and balancing - Discover raw chef’s techniques to elevate a menu to take it from ordinary to exceptional.
Savoury creamy stock base – learn to create a flavourful savoury stock base that you will be using for the cream of broccoli soup.
Fermentation – add some probiotic deliciousness to the dish. Learn the how and why of fermenting shiitakes that you don’t need any special equipment for.
Sauces – you’ll learn how to create a delicious dairy-free truffle cream sauce and a sun-dried tomato sauce – you can use either or both on the entrée. This main course can easily become two different dishes and is highly adaptable.
Chocolate ganache cake - everyone loves chocolate and there's no messing about with this. We will be using a classic pairing of chocolate and raspberries.
Raspberry Ice cream – yes really! Learn how to make a silky dairy-free raspberry ice cream that works so well with the richness of chocolate.
Plus, you’ll have all the technical know-how, shopping list and recipes and a download of the videos to watch again after the live zoom if you wish.
A straightforward three course raw menu that really has the 'wow' factor to impress your friends.
“OMG! I just came back from this course, waow! This simple entertaining workshop requires no special equipment but it is amazing in its complexity of flavours, textures and aromas. Believe me when I tell you that I am the type of slapdash cook that does not create beautiful food….. but…… today I surprised myself. I now feel confident to entertain my vegan friends next weekend. Thank you Deb!”

The recipes and running order for each session will be uploaded before each course. You can ask questions during the live zoom session. Feel free to 'cook-a-long' to the zoom sessions if you want to - or concentrate on watching the sessions and make the menu afterwards. After each live session you will be emailed a link to download the recording.
If you join the programme after the live events, you will find the downloadable recordings in the Academy. There is a dedicated discussion forum in the academy platform for you to chat with colleagues and share photos.
What is included in this course?

There are a couple of dehydrated elements on the menu but you can use your oven if you want to make these. The Simple Entertaining equipment checklist is here.pdf
