This recorded masterclass is packed full of tips, techniques and recipes - it's like being in the Deliciously Raw studio in person. Here are a few of the techniques that you’ll learn. What could be more fun?! (other than eating it all of course...)
Preparation and Planning - Learn principles of advance planning. Download the shopping list and the advance planning preparation swipe file for straightforward step by step guidance.
Flavour development and balancing - Discover raw chef’s techniques to elevate a menu to take it from ordinary to exceptional.
Savoury creamy stock base – learn to create a flavourful savoury stock base that you will be using for the cream of broccoli soup.
Fermentation – add some probiotic deliciousness to the dish. Learn the how and why of fermenting shiitakes that you don’t need any special equipment for.
Sauces – you’ll learn how to create a delicious dairy-free truffle cream sauce and a sun-dried tomato sauce – you can use either or both on the entrée. This main course can easily become at least two different dishes and is highly adaptable.
Coconut milk chocolate ganache cake - everyone loves chocolate and there's no messing about with this. We will be using a classic pairing of chocolate and raspberries.
Raspberry Ice cream – yes really! Learn how to make a silky smooth dairy-free raspberry ice cream that works so well with the richness of chocolate.
Plating and Presentation - learn techniques for plating that will ensure that your efforts will be showcased for best results. Watch different plating techniques for the same dish.
Wine Pairing - discover which wine to choose to match the menu so you can recreate the restaurant experience at home.
Plus, you’ll have all the technical know-how, shopping list and recipes and a download of the videos to watch again after the live zoom if you wish.

Once you sign up, you will gain access to everything so you can start to get organised. The recipes, prep list and recordings are available for you to watch and download right away. Feel free to 'cook-a-long' to the recordings if you want to - or concentrate on watching the lessons and make the menu afterwards.
There is a dedicated discussion forum in the academy platform for you to chat with colleagues, ask questions and share photos.
Access to downloadable recordings of the two lessons, shopping list, menu and recipe download with wine pairing guide, equipment list, advance preparation and planning cribsheet and community discussion forum.
This course is structured so that you can either cook-a-long or watch the downloadable recordings and then replicate the menu. You will need access to the internet in order to gain access to the Simple Entertaining course material and recorded lessons. You have access to this version of the course (as long as the course is advertised). All the materials are downloadable.
You’ll need a blender, a food processor, a knife, an optional spiraliser, mandolin or vegetable peeler, a nut milk bag - and other equipment that you will probably have in your kitchen. There is one dehydrated element on the menu but you can use your oven if you want to make it - it is not integral to the menu. The Simple Entertaining equipment checklist is here.pdf
